Chicken and Sweet Corn Soup

Serves: 4



  1. 1. Heat oil in a large heavy based saucepan or flameproof casserole dish. Add bacon and green onions and cook for 5 minutes, stirring occasionally.
  2. 2. Add creamed corn, consomme, water, ginger and pepper. Bring to the boil, then reduce heat to low. Add chicken and stir to heat through.
  3. 3. Turn of heat. Add egg and whisk until slightly thickened. Serve garnished with extra shallots.
